Goat’s cheese, chopped spinach leaves and green olives are added and warmed through before being set onto puff pastry and left open so the top will caramelise when cooked. Once baked this wonderfully tasty pie is best served with cauliflower and cheese and steamed broccoli. Goats Cheese & Olive En Croute is a vegetarian treat.
